Like a Tortilla Pie.........

Yup-Tortilla Pie.
Even though it's technically Spring, I'm suffering a case of the late Winter, what the hell am I gonna cook tonight syndrome.
It's Tupper Lake-the friggin' snow hasn't melted, it's gray and cloudy......
So I searched and I searched, after deciding something Mexican like would be good, because it's warm there, I found this.
Cue up the Jimmy Buffet....
Met my qualifications for a weeknight meal- Quick and easy prep and it was easy on the pocketbook.
It was a homerun.
No leftovers this morning.
The 2 slices put away for lunch today mysteriously disappeared overnight.
Multilayered tortillas, pinto beans, black beans, fresh parsley (couldn't find cilantro-It's Tupper Lake), garlic, salsa, diced tomatoes w/ jalopenos, cheese and a little sour cream on the side.
Good stuff.
You could add corn, ground beef/turkey and anything else that floats your boat.
Definitely a keeper.
Try it, You'll like it.

That looks delicious, amigo, but I think you could eat everywhere in Mexico and never find tortilla pie - there are just some things a Mexican will not do with a tortilla, and you have discovered one!

ReplyDeleteOn the other hand, real enchiladas are stuffed, put in a pan, covered with sauce and cheese, and baked - not much different than your 'pie'. Just different structure. I rescind my former statement.
ReplyDeleteNo need to rescind Doc- We Americanize a lot of ethnic dishes to suit our tastes. All it takes is a trip south of the border to confirm that!
