Honey, Is Something Burning?

"Honey, Is Something Burning?" yells the better half from the living room.

"Uh, nothing dear," I holler back from an increasingly smoke filled kitchen as I'm cranking open windows, turning on the bathroom fan and hoping that the shredded mozzarella that hit the oven floor, will extinguish itself before the smoke detectors start beeping.

Mom made soup yesterday.

She brought over the leftovers today.
I didn't have to cook tonight.

I love my Mother.

Even though it's technically Spring, I'm suffering a case of the late Winter, what the hell am I gonna cook tonight syndrome.
It's Tupper Lake-the friggin' snow hasn't  melted, it's gray and cloudy......

Upside Down Sicilian Pie...

Whilst perusing the net yesterday I ran across this recipe for Simple Bread.

It's quick and it's easy.
If you're a fan of no-kneads or time crunched you'll like this.

Peanut Butter Pancakes....

Don't know why I've never heard or thought of peanut butter in pancakes, seems like a natural fit.

I've had pancakes with chocolate chips, and fruits of all types , but never peanut butter.
I ran across this recipe and decided to make 'em for supper the other night.

They cooked up really nice and thick.

Had to do some homefries and sausage on the side.

And the finished product.
And if you look closely under the sausage and taters, there's a couple of fried eggs.

It's Chili Today!

I got an offer I couldn't refuse from the better half last night.

She'd make chili today, all I had to do was go to the store.
So this morning when I awoke, she said, "You still want chili?"

Well, does a bear shit in the woods?
"Yes, I do!", I responded, trying not to sound too excited.

She gave me a list, here's what was on it.

2 28 oz cans of stewed tomatoes
5 different kinds of beans, so I bought:
1 red kidney
1 chili bean (guess they're flavored)
1 garbonzo
1 white
1 black bean

1 lb. of ground beef

She sauteed onion and garlic in the pot with a little Evoo, browned the meat, added two chopped green peppers,and a half bag of River Valley Super Sweet White corn(corn added last) then mixed it all together.
Chili powder, red pepper flakes, and ground red pepper to taste and a touch of sugar.
Here it is simmering.
Simmered for about an hour, then it was time....

for the first bowl!
Still very hot.

Then I added a little shredded mozz.
Oh yeah!

I've eaten a lot of chili, and this ranks with the best, if not the best.

Got a 'Cuse basketball game to watch and this is the perfect dish for that!
